After years of exploring this remarkable region with Alba, Tierra Astur offers one solid answer to that question, though it comes with important caveats.

Of course, we have to mention this small chain of restaurants that has become an Asturian powerhouse. What started as a single sidrería in 1997 has evolved into a collection of five busy sidrerías located in Avilés, Gijón, Oviedo and Colloto (Siero). I've eaten there numerous times over the years, and it's a bit like walking into an Asturian theme park, spectacular and educational, but definitely more commercial than the intimate family-run places that define authentic Asturian dining. It serves massive crowds, which means you're trading that cozy village atmosphere for accessibility and impressive scale.

The professional cider service elevates every meal into a cultural lesson. The waiters pour sidra for you using the traditional escanciado technique, and they have several varieties available.

Their own organic pig farm, La Casería de Tierra Astur, raises Gochu Asturianu Ecolóxicu that "se alimenta del pasto de los montes asturianos y de cereales; especialmente de la espelta, que combina en su fase de remate con la castaña" (feeds on pasture from Asturian mountains and cereals; especially spelt, which combines in its finishing phase with chestnuts).
According to their own documentation, "La cría permanece entre un año y, un año y medio en el monte (frente a los escasos 3 a 6 meses de cría de un cerdo común en granja)" - the breeding remains between one year and one and a half years in the mountains compared to the scarce 3 to 6 months of breeding of a common pig on a farm.
